Simple Weekend Breakfast

• preheat oven to 425, have cast iron pan in there
• Slice avocado in half, take out pit
• Take pan out, put avocado half on, crack egg in
• Put whatever you want on top
• Place in oven and cook till your eggs desire

Toaster ovens are a great investment – I have a regular sized oven but use the toaster oven almost as much for smaller meals. Otherwise – fried egg with sliced avocado on top or omelette?

I make baked eggs in muffins tins all the time it usually takes 7 to 10 mins for a white outside and runny yolk.

I just tried this and the whites ran all over. I realized there are different size ‘holes’ in the avocado. Do you scoop to make a large enough space for the whole egg?

Yvonne, I had the same problem. I used a large egg, which I think made the problem worse. cutting a larger pit probably would help, along with cracking the egg in a dish and then carefully transferring it into the avocado. Delicious recipe!

I was guessing that I would need to scoop out some avocado to accommodate the egg – I had a fairly average-sized avocado and a fairly average-sized egg – but the egg whites still spilled over and I would have had to scoop out most of the avocado for that not to happen. So definitely look for really big avocados and really little eggs to make this recipe work best.
