   I shared a plate of paella with a family on the street outside their home in Valencia. It was during Las Fallas, a huge festival. The father cooked rice, saffron, shrimp, chicken, tomatoes, and homemade sausage in a large pan over a fire of old, dry grapevines. It was one of the best things I’d ever eaten.
